Bread from Maple Row, baked before the street wakes up

Maple Row Bakery is a small neighbourhood bakery with one deck oven, four bakers and a queue that starts forming just before seven. We bake long-fermented sourdough, laminated pastry and a short list of cakes, and most days we sell out by early afternoon.

Maple Row Bakery is invented. This is a SiteSelf test site: the bakery, the people, the address and the prices are all made up, and the site may be changed or reset at any time.

Sourdough

Six loaves every day, fermented for up to thirty hours. The country loaf is the one people come back for.

Pastry

Croissants, pain au chocolat and cinnamon knots, laminated by hand the afternoon before and baked at dawn.

Classes

Two Saturday mornings a month we clear the big table and teach eight people to bake a loaf they can repeat at home.

Opening hours

Tuesday to Saturday, 7:00 to 15:00. Sunday, 8:00 to 13:00. Closed on Mondays, when the oven gets its weekly clean.
